- 3 tomatoes, chopped
- 1/2 onion, diced
- 1 tbsp. olive oil
- 1/2 tsp. dill weed
- Mix all ingredients and enjoy with a chip or veg of your liking. I had a hankering for chips so I used GF chips from TJ’s made from Organic Blue Corn, Amaranth, Quinoa and Chia Seeds. My family enjoyed it as well, even my son, and with only 40 mg of sodium and no Canola oil in sight 🙂 I think it was a win win for everyone.
